Abstract

The high oil content in chips caused by manual draining reduces product quality and production efficiency at Aneka Keripik Ora Umum, a small-scale food industry in Gunungpati, Semarang. Therefore, the implementation of a more efficient and ergonomic machine is required. This study aims to design an oil spinner machine and evaluate its technical and economic feasibility to support the modernization of small-scale production equipment. Anthropometric measurements of 10 employees showed shoulder width, finger width, hand reach, standing elbow height, and popliteal height values of 39.7cm, 6.87cm, 77cm, 99.2cm, and 40.49cm, respectively. The data met both adequacy and uniformity test requirements and were used as the basis for machine design. The machine dimensions were determined using the 50th percentile to accommodate the majority of workers and utilized SS304 stainless steel due to its mechanical strength, corrosion resistance, and compliance with food hygiene standards. The designed machine is projected to increase production capacity from 6 kg/day to approximately 10kg/day. Economic analysis using the Break-Even Point (BEP) method resulted in a BEP value of 21.35kg/month, with an investment cost of IDR 8,000,000 and fixed costs of IDR 320,333 per month. Therefore, the machine is considered technically and economically feasible for implementation.
